Stuck fermentation
Caught fermentation occurs when your beer fails to
convert to closing. This can result from the
use of old leavening or poor ingredients. The better

it from beginning. To do this, you can:
1. Re-hydrate the leaven by adding it to
some water and adding wort to the leaven an hour
or more before you promotion. This will aid ensure
that your leaven is still participating .
2. Use an all shake or a recipe that has
a lot of it, as leavening needs nutrients to stay
active. Corn and sugar lack these nutrients. If
your leaven still fails to endure, it cannot
