Chafing dish for fondue

The name fondue comes from the French word "fondre", which means to melt or blend. Fondue meaning melted cheese in wine. You will need a chafing dish over a spirit stove and long fondue forks. Place the heated fondue dish on the spirit stove in the center of your table and hand out a fork to all your guests. Everyone spears a piece of bread onto the long fork, dips it into the fondue, turns it once or twice before eating it. In no time the ice will be broken and the party in full swing with everyone trying not to drop the bread form the fork.

A chafing-dish (from the Old French chauffer, "to make warm") is a kind of portable grate ("a dish of Coles") raised on a tripod, originally heated with charcoal l in a brazier, and used for foods that required gentle cooking, away from the fierce heat of direct flames. The chafing dish could be used at table or for keeping food warm on a buffet. Double dishes that provide a protective water jacket are known as bain-marie and help keep delicate foods such as fish warm while preventing overcooking.

This is a chafing dish made by the English manufacturer John Aynsley & Sons Ltd between 1912 and 1918. It is made from glazed porcelain set in a tin-plated copper base. When filled with hot water the metal base kept the child's food warm. The phrase 'chafing dish' comes from the old English and old French words 'chaufen' and 'chaufer' (modern French 'chauffer ') meaning 'to heat'. Chafing dishes have existed since at least the 1480s, and have been used in religious rites and medical practice as well as the cooking and serving of food.

CONCLUSION

Chafing dishes are either placed on top of racks or platforms or sit on legs high enough for a can of fuel to be placed underneath. The can has a cover that lifts off to expose a substance that looks like wax. In reality, this substance is sterno fuel. The fuel is lit and placed underneath the chafing dish in order to keep the food warm.
