Benefits of carrots
Carrots are usually associated with night vision improvement. The benefit of carrot juice actually covers a much wider field. This rich source of beta-carotene, converted into vitamin A in your body, also has an antioxidant arsenal that targets heart health, and cancer cells.
High carotenoid intake is associated lowered risks of many cancers. This is where the beta-carotene and other similar elements in carrots, play such a vital role. There is proof that synthetic forms of vitamin A do not offer the same benefit, as deriving it from carrot juice.
carrot cake recipe
4 eggs
3 cups grated carrots
2 cups sugar
2 cups flour
1 1/2 cups vegetable oil
1 cup chopped nuts (optional)
3 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
Sift together in a large bowl the sugar, flour, soda, salt and cinnamon. Add the oil and mix well. Add the eggs, one egg at a time, mixing well after each addition. Add carrots, nuts and vanilla and mix thoroughly. Pour into a floured and greased 13 x 9 x 2 inch cake pan. Bake in a 350º oven for 30 minutes. Cool in pan. Frost when cooled.
Carrot snack
Low in fat, cholesterol free and low in sodium carrots make for a wonderful snack and healthy addition to meals. Salads can easily be garnished with carrot strips created by pealing clean dry carrots with a potato peeler. If you place the carrot strips in the microwave for 30 seconds with a tablespoon of water you can easily curl the strips for added flair. This is a wonderful way to introduce carrots to young children.
Carrot preparation
Carrots are an excellent source of carotene the source of vitamin A, they are also high in fibre and they have high sugar content. They may be eaten raw, which makes them a favourite nibble for the weight-watcher; they can be cooked as a vegetable accompaniment in a meal or can be included in many main course dishes. They may be grown in frames or out in the open and there is a wide range of varieties to choose from.
CONCLUSION
Carrot juices contain certain oils that work on the mucus membranes of the stomach and colon. This helps with digestion and starts your bowels functioning properly. Carrots are high in fiber and beta-carotene, an antioxidant, which the body converts to vitamin A.
